Our Chef

Sushi Chef - FUTOSHI OTO

Born in Hiroshima, Oto began his culinary career studying the art of sushi at a restaurant in the city of Hiroshima for 10 years. At the age of 31, he opened his own sushi restaurant, Sushiya Oto.The restaurant was awarded a Michelin One Star in 2013 and 2018.

In April of 2019, Oto left his hometown to begin a new adventure, and joined Hyatt Regency Seragaki Island Okinawa as Sushi Chef of the specialty restaurant, Shirakachi Sushi. My goal is for Shirakachi Sushi to be a destination restaurant where people travel to Hyatt Regency Seragaki Island Okinawa for the sushi.

I want my guests to enjoy a relaxing meal without the perceived pretense of sushi. I hope to introduce Japanese sushi from Okinawa and incorporate Okinawan vegetables and fish into the menu.”
