Dress Code 
For guest coming directly from the ski slopes to dine in the hotel, we offer boot storage and slippers to be worn in the hotel while dining. Please come directly to the ski slope entrance for boot storage and slippers. Smart casual. We kindly request that all guests refrain from wearing beach sandals, ski boots, hotel robe, bathroom slippers, male sportswear, tank tops or other sleeveless garments

Olivio's Winter menu offers you variety of north Italy's dishes. With rich and strong flavor to warm your body, enjoy our chef's mouthwatering creations with local produce of octopus, veal, wine-lamb and pumpkin this winter. Authentic saffron risotto accompanied with ossobuco of Milanese's favorite, or our famous handmade pasta tortellini. Also our traditional tiramisu is back on menu, as well as Sicilian desert of cannoli to compliment your meal.

Born in Sapporo, Chef Naoto's  culinary journey started in renowned Italian restaurant in Tokyo, followed by 1 star ristrante in Milan, Tuscany and Osaka before returning to his homeland Hokkaido to take a lead of Olivio team in Park Hyatt Niseko. His Piatto Forte - strong dish - are handmade pasta, risotto and an array of local cuisine of Tuscany. With Niseko's local fresh ingredients, he replicates authentic Italian fare to make people happy and cheerful as Italian people do. 

Enjoy signature tagliatelle, ravioli, gnocchi, paccheri, risotto tossed in a mourhwatering sauce made with fresh local produce.
