Originally opened in 1969 and reincarnated at Hyatt Regency Hong Kong, Tsim Sha Tsui, Hugo’s is an authentic European restaurant where classic meets timeless, offering traditional western cuisine prepared only with the finest ingredients available.

The safety and wellbeing of our guests and colleagues is always a top priority for us. In light of the recent COVID-19 developments, please see below the precautionary measures at our restaurants and bars:

  • Our associates will be tested for COVID-19 every 7 days or are fully vaccinated.
  • Patrons are required to use the “Leave Home Safe” mobile application or register personal details before entering the outlets.
  • Each table are separated by at least 1.5 meters.
  • Guests are required guests to wear masks when entering the outlets, and our associates always wear masks.

INSPIRING HISTORY

Named after a fictional character Herr Hugo Ludwig Wilhelm von Gluckenstein, a Bavarian Host who served only the best food and wine, now Hugo stands still in his armor suit at the entrance to welcome all honorable guests. 

Decorated with ornate mirrors, chandeliers, guns and shield plaques, the restaurant has an array of traditional serving apparatus, including Christofle hors d’oeuvres and dessert trolleys, all from the 1960s, presenting a unique and classic European atmosphere.

Gueridon service is the métier of the restaurant.

Be inspired by Hugo’s crafts of table-side preparation such as lobster bisque, Caesar salad, steak tartare, steak au poivre, Dover sole meuniere, lobster thermidor, crêpes suzette and café diablo. 

Hugo's also has extensive imported items including roasted US rib of beef, roasted lamb rack, as well as a wide variety of world class steaks including US prime angus, all from the show kitchen's open grill.

With chandeliers, ornate mirrors, guns, table, floor, carpet and genuine Ming vases inherited from the old Hugo's from the 1960s, Hugo's private dining room can accommodate private gatherings of up to 12 persons. KARL STEELE, CHEF DE CUISINE

British-born chef Karl Steele began his culinary career in 2008, working in various restaurants in England, Australia, the Netherlands and Hong Kong, including the three Michelin-starred The Fat Duck in England. He is a veteran chef who has also worked alongside award-winning chefs Oliver Marlow and Ash Salmon at the Michelin green-starred Roganic and Aulis in Hong Kong. 

Born and raised in Bournemouth, a coastal town in the south of England, Chef Karl gradually gained extensive knowledge of different ingredients and mastered his cooking skills using vegetables grown in his family garden, wild mushrooms he easily picked from a nearby garden and abundant fresh seafood found in his area. In his capacity at Hugo’s, Chef Karl will showcase his culinary creativity with locally sourced vegetables and sustainable seafood to impress the Hugo’s food connoisseurs.
