Merdeka Grill offers a modern grill experience on Level 75, where premium meats, sustainable seafood, and locally sourced produce take center stage, complemented by a curated beverage program.

Lunch highlights include a three-course set menu and à la carte grill selections. Dinner unfolds course by course, with signature dishes prepared or finished tableside, from wood-roasted salmon to chateaubriand and vanilla ice cream topped with Oscietra caviar.

Chef Marcus brings a cultivated perspective to the kitchen, shaped by his experience across respected culinary establishments in Singapore and his native Malaysia. He began his journey in Singapore before returning home, where he refined his approach to modern European cuisine through a deeper understanding of technique and flavor. ​

Rooted in an ingredient-led philosophy, his cooking is guided by French and Nordic influences and enriched by his own heritage. With seasonality and simplicity at its core, each dish is crafted to honor the character of every ingredient.
