Located at Hyatt Regency Tamaya Resort & Spa, Corn Maiden offers an authentic Southwestern dining experience set amidst the natural beauty of the Santa Ana Pueblo. Taking inspiration from the land, our culinary team showcases what can be grown and raised within the Rio Grande River Basin. A celebration of deep-rooted traditions and pueblo history, the menu celebrates the Corn Maiden and agricultural abundance that she symbolizes. From Farm to Table

Corn Maiden’s menu features fresh ingredients grown on site. Items from Tamaya’s bountiful gardens used in the restaurant include: onions, green beans, tomatoes, peppers, cactus fruit, beets and more. Dishes are seasoned with garden-grown herbs, such as rosemary, mint, sage and basil.

The restaurant’s cocktail program features shrubs consisting of house-made vinegars from various in-house produce, while many of the spirits are New Mexican distilled and owned.

The Gardens at Tamaya

The Gardens at Hyatt Regency Tamaya Resort & Spa reflect an ongoing commitment to sustainable sourcing. Garden soil is enriched with topsoil and fertilizer from the Stables at Tamaya, coffee grounds from the resort’s banquet operations and worm castings created from hotel food scraps. Our orchard consists of apple, plum, cherry, and peach trees.

In addition, we have six active beehives on property. Tamaya honey is used in specialty menu items such as traditional Indian fry bread and house-made whipped ricotta.
