Blending three cultures: Native American, Hispanic and Anglo, Tamaya’s chefs have created innovative dishes incorporating traditional ingredients with nouvelle cuisine. This region's staples are red and green chile, enchiladas, tamales, chorizo, posole, tortillas and pine nuts.
