Signature Apple Pie
Our signature pie now features “Kogyoku” apples.
At our hotel, making our signature apple pie is a true art. Our pastry chef meticulously arranges thinly sliced apples, like delicate flower petals, inside the carefully folded pie. Baked for a short time in a high-temperature oven, the apple's freshness and texture are retained, creating the perfect balance of sourness and sweetness. The result is a unique dessert that can be enjoyed as it is, or warmed up and topped with ice cream.
Take-out whole pies are also available by reservation. The pie diameter is approximately 30 cm, providing approximately 8 to 10 slices. Recommended as a gift for a home party!

Fresh Chocolate Truffle
Our pastry chef created a fresh chocolate truffle utilizing chocolate from the premium French chocolate manufacturer Valrhona. It combines the Caraïbe (66% cocoa) chocolate from Valrhona with whipping cream to create a velvety smooth chocolate ganache that will melt in your mouth. With a balance of bitter and sweet notes, it is a truffle that will please the senses.

Praline Orange Truffle
A ganache of two types of pralines, almond, and hazelnut, with sour cream, cocoa butter, and orange flavor, is coated with Caraïbe (66% cocoa) chocolate. In the mouth, the rich flavor of the praline is followed by the refreshing aroma of orange, giving this chocolate a pleasant aftertaste.

Rhum-flavored Dry Fruit Pound Cake

Fu-nancier
Hyatt Regency Kyoto has collaborated with Kyoto’s very own “Hanbey-Fu” which was founded in 1689 a shop in Kyoto that specializes in “fu,” a nutritionally rich traditional food derived from wheat flour to create “Fu-nancier,” our version of the famous French cake financier.
This sweet treat is baked using crushed toasted "fu" and Kyoto’s white miso. The texture is crispy on the outside and moist on the inside. The “Fu-nancier” is a perfect complement to Japanese tea or a cup of hot coffee.

Yuzucello Chiffon Cake
Our popular yuzucello chiffon cake has returned with an even more delicious and classic taste. The elegant and fragrant aroma of yuzu has been preserved, while the soft and fluffy texture has been improved. The fondant glaze on the chiffon cake is scented with Limoncello, an Italian lemon liqueur rich in vitamin C.
This cake is a great way to celebrate occasions with family and friends with its sweet and extravagant taste of yuzu and Limoncello. Packaged in a charming box inspired by yuzu, this cake makes a perfect gift.

Our artisan bakery bakes high quality fresh bread such as our original loaves of sourdough.
Our sourdough uses homemade yeast to give it an authentic flavor. Our traditional yeast production techniques may be more time-consuming than modern methods, but it allows our guest to enjoy the original natural flavors of this delicious bread.

Our Chefs
Executive pastry chef – Kiyoshi Utsumi
Kiyoshi Utsumi graduated from culinary school and moved on to work in pastry shops and hotels across Tokyo. During his mid-20s he left Japan for four years to study culinary skills in France, Belgium, and Luxemburg. After his studies, he returned to Japan to work as an instructor at Le Cordon Bleu before joining Hyatt as a pastry chef. Kiyoshi worked in Hyatt hotels across Japan and China before being appointed Executive Pastry Chef at Hyatt Regency Kyoto in March 2020.
