Sushi by Scratch Restaurants: Deer Valley

Sushi by Scratch Restaurants brings Chef Phillip Frankland Lee’s signature omakase experience to Grand Hyatt Deer Valley in an unexpected and intimate setting. Tucked discreetly within the resort, this chef-driven counter offers a limited number of coveted seats, creating a highly personal journey through new-wave nigiri and thoughtfully composed bites from both land and sea. Guests are invited to slow down, settle in, and let the chefs guide the experience through an artful, free-form interpretation of the traditional sushi counter, punctuated by playful surprises and elevated takes on familiar favorites. Seatings are offered at 5:00 pm, 7:15 pm, and 9:30 pm, Wednesday through Sunday. Reservations are strongly recommended.

Remington Hall

The pinnacle of American dining, our signature restaurant offers breakfast, brunch, and dinner with breathtaking views of the Jordanelle Reservoir. Standout dishes include innovative takes on classics, such as bison tartare with cured egg yolk and truffle aioli, and wild boar bolognese with house ricotta gnocchi, ricotta salata and aged balsamic.

The Lounge at Remington Hall

Complementing Remington Hall, The Lounge experience features lunch and après-ski indulgencies. Complete with an adjacent sports room, the lounge showcases an array of elevated bar bites, such as wagyu ‘pigs’ in a blanket and caramelized onion dip served with chips and caviar. The specialty cocktail menu is crafted by celebrated NYC mixologist Frank Maldonado.

Hidden Ace

Tucked underground, Hidden Ace is where live performances by local legends meet a curated whisky-forward cocktail menu. Savor the sounds of crafted talent while enjoying drinks like the Western Whistle—featuring Alpine Bourbon, apple liqueur, chamomile cordial, fresh lemon juice and egg white—and elevated bites such as local fondue and the famous artisanal hot dog. Here, the music and the menu come together for an experience like no other.

The Living Room

Enjoy an afternoon of indulgence, elegance and alpine warmth with our High Chocolate experience. Step into the refined embrace of our Living Room, where afternoons unfold in an atmosphere of effortless luxury. High Chocolate is more than a treat—it’s a ritual, a moment of indulgence framed by the crackling warmth of our oversized, cozy fireplace, the soft melodies of live piano music, and breathtaking soaring views of the terrace and the snow-capped Uinta Mountains beyond. Reservations required at least 24 hours in advance.

The perfect start and end to your day! Nestled next to the ski lockers with outdoor seating and cozy fire pits, Double Blacks transforms from a bustling morning coffee spot to an inviting après-ski haven. Enjoy hot chocolates, including Buttercream or Mexican, spiced ciders, and indulgent bites like Truffle Mac n Cheese, Croque Monsieur, and S’mores. Whether warming up or winding down, Double Blacks is your go-to destination for comfort and flavor.
