Sette Negroni

New Beverage

The Negroni is a popular beverage enjoyed as an apéritif in Italy.   Our original house-made Negroni uses 7 kinds of spices and herbs (Rosemary, Green Cardamom, Coriander, Nutmeg, Cinnamon, Fennel Seed and Star Anise) which is influenced by the name of our restaurant, trattoria sette.

The Negroni pairs well with our Italian dishes, with its exquisite bitterness and sweetness, making your Italian dining experience a memorable one.

*Sette means "7" in Italian.

Chef de Cuisine, trattoria sette - Masaki Doshita

Masaki Doshita began his career at a long-established Italian restaurant in Kyoto. After having sharpened his skills as a pizzaiolo he entered the kitchen of Trattoria Sette in 2007, rising to Chef de Cuisine in April 2019.

"It is a great pleasure to work daily, cooking traditional Italian home cooking with its pure and fresh seasonal ingredients”. Unsurprisingly his favorite food is pizza! He is also fond of motorcycling and fishing. Born in Kyoto, Masaki is member of the Japan Neapolitan Pizza Craftsmen Association.

Durum Semolina “Calamarata” Pasta

Calamarata is a classic home pasta dish from Napoli. It is said to have been named after the Italian word for squid, calamaro, because its shape resembles a piece of sliced squid. Trattoria Sette's calamarata is cooked with a shrimp bisque, imparting a distinctively smooth and creamy flavor to this culinary specialty.

"Because it is served with a rich tasty sauce, I decided to make a calamarata pasta with a strong flavor capable of matching it. This springy, chewy pasta combines well with the rich seafood flavor of the sauce. This is a dish that Trattoria Sette is particularly proud of, so please give it a try!", says Chef Doshita.

ピッツァ マルゲリータ D.O.C.

Pizza La Bufalina D.O.C.

Our signature pizza is “la bufalina”, a classic margherita for which the chef imports DOC buffalo mozzarella from Campania. The natural salinity of the buffalo milk is the perfect contrast for the sweetness of the tomato sauce.

Our Commitment to Quality

trattoria sette's authentic Neapolitan pizzas are baked at once in a specially-made stone oven, bringing out the flavors of the ingredients. 

The dough is a carefully devised original recipe of our hotel bakery chef. A long fermentation elevates the tastiness of the dough, making it an even more essential element of our delicious pizzas. 

But for the perfect pizza timing is also important. From the moment an order is placed at Trattoria Sette every pizza is prepared with precision, from the stretching of the dough to the completion of the baking.

"Zuppa Di Pesce with Lobster"

In Italian, ‘Zuppa di Pesce’ means fish soup. Trattoria Sette's Zuppa di Pesce is made using fresh seafood topped with sumptuous lobster for a robust and flavorful soup. The soup is served on a frypan and kept warm beneath a dome of pizza dough. When cutting the dough, the tantalizing smell of lobster is released to spread across the table. You are sure to be delighted as the flavors and aromas of seafood and lobster flow over your tongue.
