Together with this luxurious meal, our staff will prepare freshly brewed Japanese tea from Kyoto's long-established Japanese tea shop "Ippodo Tea."

A gorgeous scent and a mellow sweetness.
The condensed tea leaf releases a powerful umami-like fragrance.

Iribancha
A favorite in Kyoto Iribancha has a refreshing taste. Its distinctive appearance and fragrance might surprise people drinking it for the first time. 

Hosen (Sencha)
A wonderful balance of sweetness and astringency that brings an inadvertent smile to your lips.

Kan no shiro (Matcha)
It has a good balance of umami and bitterness and is fluffy and mellow.

Chef Profile

Miwa

Head Chef, Touzan - Atsushi Miwa

Biography
Chef Miwa is a Japanese native born in Hyogo prefecture (1978). He began his culinary career fresh out of high school at a major corporate facility in Osaka (NTT’s large hall). Afterward, he sharpened his skills as a chef while working at a hot spring inn, a restaurant, and at a major Western hotel brand (The Westin Hotel Osaka). 

In 2014, Miwa joined the culinary team at Hyatt Regency Kyoto and he rose to the position of head chef at Touzan in 2018, being the youngest person to do so.

During Miwa’s prestigious career, he has won numerous competition rewards including the 2013 RED U-35 Silver Egg Award.

Thoughts on Cooking
In order to create delicious dishes, it is vital to check for freshness and quality of ingredients. We must visit farms and sites where our ingredients are produced to create our menu. It is important to listen to the knowledge and spirit of the farmers and producers who make our ingredients to bring out their best flavors.

Chef Miwa strives to bring out the natural flavor of ingredients, with the concept of “cook with reason”.
