The meat is taken from both sides of the neck of the pig, with rich snow patterns, which is also called ‘golden six taels" (six taels≈0.23kg) because of its scarcity. Chef Yang's originality and innovation are amazing, he used the technique that Shanghainese people used to smoke their fish, to deep-fry it at high oil temperature until it is crispy on the outside and tender on the inside and add sweet and sour sauce to enhance the flavor and aroma.

Selected black beef from Bohai, using the western method to stir the beef with vegetable juice and then left to lock in the juice, making the meat soft and juicy. The beef fillet is formed into a crispy shell under high oil temperature, melted with butter and black pepper, fried with oyster sauce to caramelize, with crispy solo garlic slices and seaweed powder, crispy and rich, tender and juicy, creamy.

This dish originates from the "Man-Han Imperial Feast", with meticulous processing of "giant grouper skin" through a complex sequence of steaming and ice-soaking, alternating hot and cold treatments to make it swell like a pine cone and remove the scales. It is then slowly stewed in abalone sauce to infuse rich flavor. The dish selects tender, glutinous abalone with a soft interior and chewy exterior. Guangxi Lipu taro is deep-fried to golden crispness and simmered together until fully absorbing the savory, aromatic broth, resulting in a deeply umami and fragrant with scallion profile.
