Guest rooms are equipped with large-format shampoo, conditioner, and body wash bottles, eliminating single-use plastics to further our sustainability goals.
In our event spaces, we offer refillable water stations and self-service options to reduce the use of single-use plastics. Digital signage and the Hyatt App help minimise paper usage, while stationery is provided only upon request to prevent unnecessary waste.
We proudly have the largest integrated installation of E-Water in Australia (and the world)! E-Water provides biodegradable, commercial-grade disinfectant and sanitiser without harsh chemicals.

We proudly work with local farmers and small producers across regional Victoria and Australia to source the freshest, seasonal ingredients, so that our dishes support more sustainable food production and local communities. Our commitment extends beyond sourcing to reducing waste—through our partnership with Bardee, we upcycle food waste into fertilizer and protein products, helping reduce impacts on landfill and emissions. We also support local pollination through our adopted honeybee colony with Backyard Honey, contributing to a healthier ecosystem.
