Waste and Circularity

We collaborate with WOMPOST, a local, woman-owned composting company, to enhance our eco-friendly practices. Food and organic waste are responsibly managed to divert waste from landfills, reduce methane emissions, and enrich soil for local gardens and farms. Our hotel also partners with We Don’t Waste, a nonprofit dedicated to redistributing unused food to those in need. Food from our kitchens is shared with local communities, reducing waste while addressing food insecurity in Denver.

Our Food Philosophy

Rooted in our "Food. Thoughtfully Sourced. Carefully Served." food philosophy, we focus on sourcing from local purveyors and suppliers who employ more sustainable practices, where possible.

Rooftop Beehives initiative

Our eco-friendly hotel is home to two thriving bee colonies on our rooftop. These pollinators play a vital role in enhancing the biodiversity of downtown Denver, supporting local ecosystems and contributing to a greener, more sustainable urban environment. Their honey is incorporated into seasonal cocktails, culinary creations and even our own honey wheat brew – Mile Hive – available at Courier. Kitchen & Bar, allowing guests to savor the sweet rewards of sustainability.
