Chef Yusa started his career at Hyatt by making his internship at Grand Hyatt Sao Paulo 9 years ago. After working and developing his Japanese culinary technique at Momotaro, Huto and Nobu restaurants, he came back to the Hyatt Family in 2018 to open Ushin Japanese & Grill at Grand Hyatt Bogotá where he has helped to position the restaurant as one of the best Japanese restaurants in Bogota according to TripAdvisor.
As Ushin Japanese & Grill chef, Yusa not only oversees Ushin’s kitchen but also gives cooking classes for clients and groups in the banquets venues. He creates Japanese preparations marrying seasonal flavors, grill and modern presentations.
