Enjoy an unforgettable tasting menu, complete with a pre-dinner champagne reception and optional wine pairing.

Next in the series, we're delighted to welcome guest chefs Ryan Cole and Nina du Toit from Salsify, one of South Africa’s most celebrated fine dining destinations.

As Executive Chef and co-owner of Salsify, Ryan Cole is known for his understated yet deeply expressive style of cooking, shaped by the seasons, the land and, most notably, the sea. Coming from a family of fishermen, his connection to seafood is innate, with much of the fish served in his restaurants personally sourced or caught by him. Classically trained but unbound by tradition, his cuisine combines refined technique with a strong focus on sustainability, locality and creativity.

Alongside him, Salsify's Head Chef Nina du Toit brings a philosophy of “elevating the ordinary to the extraordinary”, transforming humble ingredients into elegant, contemporary dishes with precision and artistry. Her approach, rooted in classical technique and driven by curiosity and detail, has been instrumental in shaping Salsify’s distinctive culinary identity.

About Salsify

Set within the historic Roundhouse overlooking the Atlantic Ocean, Salsify offers a dining experience that celebrates heritage, seasonality and sustainability. Together, Ryan Cole and Nina du Toit create ever-evolving menus inspired by the surrounding landscape, showcasing locally sourced ingredients, foraged elements and sustainably caught seafood.

Their thoughtful, ingredient-led approach has earned widespread acclaim, with Salsify ranked 88th on The World’s 50 Best Restaurants extended list, awarded Best Restaurant at the 2025 Eat Out Woolworths Restaurant Awards, and consistently recognised among South Africa’s top dining destinations.

Set in the beautiful grounds of Harmony Garden in Melrose, just a short drive from SCHLOSS Roxburghe, the Borders Book Festival is one of Scotland's most beloved literary gatherings.

This year's festival features a stellar cast of literary icons, thinkers and public figures for conversations that entertain and inspire. Former Prime Minister Gordon Brown opens the festival, while Rory Bremner closes it in characteristically brilliant style. In between, guests can enjoy events with Sam Heughan, Lorraine Kelly, Prue Leith, Alan Titchmarsh, Pam Ayres and Alexander McCall Smith, alongside political figures including Nicola Sturgeon, Kate Forbes and Jeremy Hunt.

The BBC joins the festivities with two special free events, and evening entertainment includes live music performances from the iconic Horse and Americana trio Jaywalkers.

For younger readers, the Family Book Festival offers a packed weekend of storytelling and workshops, while three special events take place within the atmospheric ruins of nearby Melrose Abbey. Beyond the marquees, local food producers, craft markets and the festival's beautiful garden setting make for a wonderful summer's day out.

Join a free weekend celebrating fly-fishing, conservation and community on the River Tweed. No tickets are required to attend this event.

Building on the success of last year's inaugural Tweed Salmon Festival, the River Tweed's ghilling and angling community has once again partnered with some of the world's leading outdoor brands to bring this grass-roots fly-fishing event back to the river.

This free, not-for-profit, weekend festival was conceived with several clear objectives - to raise funds for Atlantic salmon conservation and to provide an accessible platform for introducing people of all ages to fly-fishing.

Over the course of the weekend, visitors can take part in a wide range of learning opportunities, including free fly-casting instruction for both children and adults. Hosted by the river's angling education officer, Ben McCallum, TweedStart will deliver the children's educational programme, while A.A.P.G.A.I. instructors will offer single- and double-handed casting tuition for adults of all abilities.

World-class demonstrators will also be in attendance on the designated Spey Loch, with casters such as Scott Mackenzie, Marina Gibson and Gordon Armstrong showcasing their impressive spey-casting skills.

The main festival hall will host a variety of retail opportunities, featuring retailer Fin & Game alongside leading fly-fishing brands including CND rods, Nextcast fly-lines and LOC waders. Renowned fly-dressers such as Stuart Foxall, Paul Little and Ross MacDonald will demonstrate a range of tying techniques using the latest materials.
