Exilio Bar
Exilio Bar exists because of the secret exile order, made by King Carlos III of Spain in 1767, that called to suppress the Society of Jesus (Jesuits). In this very building more than 250 years ago, the Jesuits taught, resided and more than likely enjoyed their evening brew until their sudden expulsion. The bar counter is made of solid mahogany, supported by five carved figureheads of the ships. These figureheads correspond to the five main vessels that took the Jesuits back to Toledo, Spain, after the exile. With its own touch of mystery, Exilio has a secret way for guests to order their favorite concoction. After fighting relentlessly against Mussolini as an Italian partisan, Luigi Cagnoni became disillusioned with Italy and Europe. He decided to leave his beloved Italy and stowed away on a cruise ship, hoping to end up on the shores of America. To blend in, Luigi stole a uniform and posed as one of the ship’s common sailors. Alas, the crew got wind of his charade. And while going through the Panamá Canal, they threw Luigi overboard! Forced to fend for himself in Panamá, Luigi turned to cooking in order to survive. Everything he learned from his Nonna, all her “peasant” recipes, he produced with a passion for the locals. Cucina Povera, or the cuisine of the people, is a style of cooking best represented, in the past, by the lower class of a given society. The concept can be found in every culture and is about making great food with simple, high-quality, and available ingredients. Cucina Povera involves skilled preparation by knowledgeable cooks using inventiveness and techniques passed down through generations.
