All dishes are prepared at the diner's table, on charcoal grills that are built into the centre of the table.

The Market Café will serve as the all-day dining restaurant of Hyatt Regency Changbaishan and will operate in both buffet and a-la-carte styles, serving breakfast, lunch, and dinner. The main emphasis of the restaurant will be placed on visual food displays in the various show kitchens, and on offering the freshest products for each meal period. “Eating out of the pan, off the grill, and out of the wok” will best describe the restaurant concept. Value for money, a wide choice, and ongoing menu changes using seasonal products will be the objectives.
