World Cheese Afternoon Tea

We have created an original chocolate from Sake-Kasu (remains from the sake-making process), which can accumulate up to 300 kg per year at Nishide Shuzo, a sake brewery in Komatsu city. Aiming to create an SDG-friendly product to upcycle this waste in collaboration with them, we used Sake-Kasu to craft three types of chocolate: dark, milk and white. The mellow scent of Sake-Kasu brings out the chocolate flavor, and we recommend pairing it with champagne or Japanese sake.

Located in a mountainous region of Gifu Prefecture that was cut off from the rest of the world for a long period of time, these villages with their Gassho-style houses subsisted on the cultivation of mulberry trees and the rearing of silkworms. The large houses with their steeply pitched thatched roofs are the only examples of their kind in Japan. Despite economic upheavals, the villages of Ogimachi is outstanding examples of a traditional way of life perfectly adapted to the environment and people's social and economic circumstances as well as Gokayama area in Toyama Prefecture. One-day bus trips are available from Kanazawa station.

Historic Villages of Shirakawa-go (UNESCO’s World Heritage)

Experience making gold leaf crafts in a 200-year-old Japanese traditional house in Higashi Chaya-gai district. Using the same materials and tools as gold leaf craftsmen, you can create the "oborozuki (hazy moon)" pattern with gold leaves on a Yamanaka lacquerware plate. As a craftsman will explain the process in detail, it will be fun and easy for everyone. Participants will also savor matcha green tea with Ohi-yaki tea bowls and Japanese sweets made by Morihachi, a long-established Japanese confectionary store in Kanazawa.

This samurai villa was built in 1863 by Maeda Nariyasu, the 13th lord of the Kaga Domain, as a retirement home for his mother. The elegant historical building incorporates Western glass and pigments, a reminder of the lifestyle and inspirations of the feudal lords of the time. "Gunjo-no-Ma" is a colorful room painted with ultramarine blue, a precious color that has been used in many of Kanazawa's restaurants and machiya houses since the Meiji era to signify a sense of hospitality. Head to Katamachi on the weekend for regional specialties like Nodoguro rockfish, Kano crab, Kanazawa curry, Hanton rice, Kanazawa oden, and more. Filled with shops and eats, this area is a local favorite for restaurant and bar hopping. For a unique food experience, visit Shintenchi or Mishokugai for tiny bars and restaurants with the perfect opportunity to mingle with locals.

Katamachi

Omicho Market is a bustling seafood market where curious foodies can try local bites, including Kaga vegetables (cultivated in Kanazawa), shellfish, and rice bowls topped with seafood. Omicho Market

Ono is a port town 15 minutes by car west of Kanazawa Station. It flourished with shipping trade in the Edo period and is known for its old town scenery and soy sauce production.
