Kanazawa Irodori Special Dinner

The Kanazawa Irodori Special Dinner course will surely please a wide range of diners, with an abundance of seasonal Kanazawa ingredients such as Kobako female snow crab, which is only available for a short period of time (approximately two months from early November), sweet shrimp, cod roe and Kaga local vegetables. The female snow crab, a typical Kanazawa delicacy, is served in a salad with densely flavored crabmeat, along with the grainy texture of the outer roe and the rich inner roe. Other delicacies include a meuniere of mild cod roe with Kanazawa garland chrysanthemum and Kaga lotus root, and a quenelle of sweet shrimps and sea bream with Gensuke daikon radish rice cakes. Chef Ichizuka creates a fusion of the finest seafood and a variety of local vegetables into an artistic ensemble of flavor and colorful delight!

Our Chef

Manabu Ichizuka

Born in Ishikawa Prefecture in 1965, Ichizuka dreamed of becoming a chef since he was young—he began his culinary career in a local hotel in the Hokuriku region after graduating from culinary school, and entered competitions consistently to better his skills. In 2007, he moved to Tokyo as Chef de Cuisine of French Kitchen at Grand Hyatt Tokyo and later joined the opening team of Palace Hotel Tokyo in 2011 as Chef de Cuisine of the main dining outlet Crown, where he remained for 6 years.

His skills are grounded in his experience in Paris, where training at the legendary, Michelin-accredited Le Grand Véfour, L’Auberge Bretonne and La Pyramid opened his eyes up to the talents and techniques of local chefs that create globally-recognized cuisine. In 2002, he was awarded the prestigious title of Maîtres Cuisiniers de France “Jean Schillinger”, and came in 2nd in the 2011 Prosper Montagné Trophy, a competition where chefs gather in Paris from all over the world to compete.

In 2020, Ichizuka moved back to the Hokuriku Region for the opening of Hyatt Centric Kanazawa and Hyatt House Kanazawa, as Executive Chef for both properties. Ichizuka is equipped with more than his spectacular skills and global outlook—he is known as a keen fashionista, whose sense and originality come out in the unique dishes he creates.
