Touzan Afternoon Tea

Touzan offers a unique Japanese afternoon tea experience. It includes two tiers of beautifully Japanese-influenced savories prepared by Touzan and delicious cakes and scones all created by our pastry chefs. We have carefully chosen a selection of Japanese teas to accompany your afternoon tea.


The Touzan Afternoon Tea Team 


The Touzan Afternoon Tea is carefully arranged by Executive Chef Marco Torre, Executive Pastry Chef Kiyoshi Utsumi and Touzan Sous Chef Atsushi Miwa. With more than 40 years of combined experience cooking for Hyatt, together they have created this unique Afternoon Tea experience.

The key artist responsible for incorporating the essence of Japanese cuisine into the Afternoon Tea experience is Atsushi Miwa. His mastery of kaiseki-ryori and perfect attention to every small detail blend harmoniously to create this Japanese Afternoon Tea concept.

Executive Pastry Chef Kiyoshi Utsumi, with his long service at Hyatt and his extensive international experience, has brilliantly infused classic French pastries with delicate Japanese flavors for the occasion. 

Marco Torre started working on the idea back in 2018, when he began thinking about the stand design and collaborating with local craftsmen, waiting for the right time to move the concept to Touzan.

Cleanse your palate to discover the depth of our Gyokuro tea. While being prepared at your table, an explanation will be provided about this exclusive tea which encapsulates Japanese tea culture.

Apple Pie


The pastry chef carefully bakes the pies one by one using the most delicious apples. 

The large pie, with layers overlapping like petals and is baked until golden, is a delight to the eye. The perfect balance of refreshing sourness and firm sweetness is a taste that everyone will appreciate. From mid-October, we will be making our pies with Jonathan apples.

Concierge recommendations
Nagoshi no Harae: Summer Purification



Around late June, we will have a chance to see big Chinowa ring at many shrines in Kyoto. The ring is about 2.25m tall, and it is made of cogon grass. 

I visited Kamigamo Shrine, a UNESCO World Heritage Site in Kyoto, a few days ago. The ring was built behind one of the main gates of the shrine.



It is a seasonal ritual in which one wishes to be in good health for the next six months by passing through the ring. It also involves cleansing the body of sins made over the past six months. Even though embracing the recent new normal lifestyle has been stressful, my mind felt refreshed after I visited the shrine. 



At the same time, Kyoto has a unique custom where people can avoid evil spirits by eating a traditional Japanese sweet called Minazuki. It is a triangle-shaped white Uiro, a traditional Japanese cake that is made from flour, sugar and water, with sweet red beans on top. 

During the Heian period, approximately 1,200 years ago, nobles started eating ice during the summertime to avoid evil spirits. Many people believed that evil spirits spread diseases at that time. However, ice was too expensive for regular citizens to purchase. People started making sweets to imitate ice. Therefore, the sweet is a triangle shape, and sweet red beans are placed on top of it to ward off evil spirits.
