Habit 
March 13 - 14, 2020

The Flying Elephant, at Park Hyatt Chennai, plays host to “Habit”, an unorthodox experiential gastronomy.   On March 13th and 14th an 8-course dinner experience will be curated by Manoj Padmanaban of Big Bandha (Gastronomer I Superchef I Curator) and brought to life by Balaji Natarajan, Executive Chef Park Hyatt Chennai.

Manoj’s take on people’s day to day habits, that are hard to give up, and how food plays a role in them is the unique concept being showcased. Every course will highlight a common habit and tell the story around it. The experience will be a gastronomical surprise with visual drama. The aim is to break most rules with the ultimate goal of pleasing the palate while figuring out the combination of various textures, flavours and cuisines from around the world that impact human habits. 

The execution of this food extravaganza rests with Chef Balaji who along with his talented team will ensure these habits come to life. Always up for a challenge, his passion for food drives him to high levels of creativity.

ABHIJIT BITLA IS THE NEW CHEF DE CUISINE AT THE FLYING ELEPHANT  
December 2019


A post graduate in culinary arts and kitchen management from Ealing, Hammersmith and West London College, London he began his career in 2007, at Jury’s Inn, Chelsea UK.  He then moved on to Gordon Ramsay’s Boxwood Café where his skills got further honed. His 12 years of experience also includes a stint at the Athenaeum Hotel in the UK where his efforts brought the hotel various accolades.

 

Abhijit’s last assignment was at the Olive Bar and Kitchen where he was in charge of the entire kitchen operations.

Chef Abhijit looks forward to using his international experience and expertise to ensure guests at The Flying Elephant enjoy an unforgettable culinary experience.

Off work, he likes to explore cities and read motivational books.

He is very excited about his move to Namma Chennai and joining Park Hyatt Chennai.
