Chef James Morin, Hyatt Regency Hill Country Executive Chef
The resort’s Executive Chef, Chef Morin oversees all culinary functions for the property, including Antlers, as well as six other food and beverage locations located at the resort, and all on-site catering functions. He joins Hyatt Regency Hill Country Resort team most recently from Hyatt Regency Orlando. Morin has worked with Hyatt Corporation for more than 15 years, where he was afforded the opportunity to work with several Hyatt hotels across the country, even Canada. Chef Morin’s culinary philosophy centers on building relationships and embracing the local food community and local ingredients. He looks forward to engaging with the San Antonio food community and creating that fresh, authentic, Texas culinary experience for which Hyatt Regency Hill Country Resort and Spa is known for.
Chef Yevgeniy Kulyk, Antlers Lodge Chef de Cuisine
Antler's Chef Kulyk is responsible for menu creation, execution and overseeing the day-to-day excellence of the upscale restaurant. Born and raised in Ukraine, Chef Yevgeniy’s first memories of food are as a communal, familial activity. He draws on his background from Ukraine to shape his culinary style. He has great respect for ingredients and works to ensure each one is chosen specifically to enhance existing flavors, creating an intentional and captivating experience with an elegant and authentic presentation. Chef Yevgeniy previously served as Assistant Sous Chef of Fiorenzo Italian Steakhouse at Hyatt Regency Orlando, where he worked side-by-side with the Chef de Cuisine, sharpening his previously honed skills while learning the Hyatt ways. Chef Yevgeniy graduated from Orlando Culinary Academy, Le Cordon Bleu Program, with an Associate in Applied Science: Culinary Arts degree.
Chef Michelle Velez, Antlers Pastry Chef
A graduate of Le Cordon Blue Academy of Culinary Arts, Velez brings a wealth of experience to her role as Pastry Chef for Antlers. The Florida native cooks with her heart and enjoys taking ordinary to a new level, delivering favorite flavors with a twist to honor tradition while elevating it to give guests exquisite treats. Velez wants people to have as good of a time eating her work as she has creating it and is looking forward to leaving Antlers’ guests with happy, flavor-filled smiles again and again. Velez’s creations can be enjoyed throughout the resort’s restaurants, including Antlers, and in the resort’s on-site catering.
