Broken Arrow Ranch is an artisanal producer of high quality free-range venison, antelope, and wild boar meat. They field harvest only truly wild animals by partnering with ranchers in Central and South Texas as an integral part of their population management programs. This practice provides a humane life and harvest for the animals, maintains a sustainable animal population for the rancher, and produces wild game meats of legendary quality. The animals are field harvested from over 100 different ranches, totaling about 1 million combined acres, located in central and south Texas. These animals are truly wild - not farmed or pen-raised. The free-range, all natural meat they produce is of the highest quality. Broken Arrow is a family-owned and operated business now in its 2nd generation, and is located in the heart of the Texas Hill Country. They strongly support sustainable agriculture methods, and their harvesting is carefully managed to ensure the continuing health of these animals without depleting the natural forage.
Homestead Gristmill, Waco, TX
This historic timber-frame mill was originally built circa 1760 in the Long Valley of western New Jersey. In use for almost one hundred and sixty years until it closed in 1918, Homestead Heritage found the mill in 2000, neglected and in disrepair, and brought it to Waco, Texas, where it has found a new home and renewed life as a working building at Homestead Heritage. The mill is now open to the public year round, grinding fresh whole wheat flour and corn meal, much as it did over 230 years ago. Homestead Gristmill proudly uses the single-step process of grinding with natural granite stones which preserves the nutritional value of the grain, and all of their grains are grown without chemical pesticides and fertilizers.
Brazos Valley Cheese, Waco, TX
Brazos Valley Cheese is dedicated to crafting all-natural, high quality, healthy cheese using traditional methods and no artificial flavors, preservatives or coloring. Their milk comes from grass-fed cows that graze freely on three local Brazos River Valley Jersey/Brown Swiss dairies that do not use growth hormones or antibiotics. Brazos Valley Cheese is a 16-year-old, family-run company located in Waco, Texas.
Aurelia’s Chorizo, Boerne, TX
At Aurelia’s Chorizo, they take the responsibility of quality very seriously. Their sausage is made with very high standards, using only full cuts of pork shoulder, with no fillers or trimmings. Garlic is freshly ground for each batch, and the smoked paprika is imported from the de la Vera region of Spain, which is very important to the sausage's depth of flavor. They take a full month to smoke, age and dry their chorizo, and we guarantee you will taste the difference.
