Growing up in the South of France, Chef Eric Damidot discovered his passion for cooking at an early age. After completing culinary school, an apprenticeship and a stint in the military, he quickly rose up through the ranks. From Pastry Chef to Executive Chef, Damidot has experienced it all – while working in kitchens from the United States to France and back again.
Now, as Executive Chef, Eric Damidot brings his passion for the culinary arts to Hyatt Regency New Orleans. With the utmost respect for all products and ingredients in his cuisine, Damidot exercises a true ‘farm to table’ mentality while applying simple, yet perfect, execution.
His menu blends the richness of his culinary background with the tremendous resources he has from seasonal and locally sourced ingredients.
